I've begun transferring domains out of 1and1.com. I actually thought things looked good...I made it through their maze of instructions and settings to "cancel" domains at expiration...yet would unlock them for transfer.
The transfers took around five days. After plugging in the authorization code when I initiated the tfr, I received no notices from 1and1 of transfer requests (they said I wouldn't), but the tfrs went through.
Yesterday, I received an invoice for some domains I forgot to cancel. My mistake. The problem is that they also included charges for renewing domains that were already transferred to a new registrar (nine of them)...not pending or anything...done deals ahead of expiration dates.
When I wrote to them about it, they sent me a response that makes me think this is going to be a tough process. Below is their e-mail to me after I asked them to fix the invoice by taking off the transferred domains:

I can understand your frustration, however if you read in your terms and
conditions, domains are non-refundable...just refer to the billing section of our
