Mini-site or pseudo-blog?

I've recently registered a bunch of domain names and now want to start developing them. What's better in terms of SEO? Creating mini-sites or a small blog? Does having a small number of static articles look better to a search engine than having a blog with half a dozen posts that rarely gets updated?

Secondly, is it better for a mini-site to just have a single page, or a small handful of inter-linked articles?

It very much depends on the content of the page :)

Search Engine index by pages. Therefore, if all your content can be categorised under a title with different headers and body, go ahead with a single page. If not, I would suggest you to create different pages for different topics / content so that you can optimize them based on their keywords.

By the way, content freshness is the most important factor in SEO. Always try to create new content :)

Either minisites or blogs, whatever you choose in both content is more important from the SEO point of view. If you go for a blog, you will need to update it's content at regular intervals. A minisite sells only one product so will need to provide as much information as possible about the product. Select popular keywords based on your product, to attract lots of traffic and use your keywords in the title, heading tags, and graphic alt tags.
