I want to register a two words domain.

How relevent is the number of results shown in Google for the "two words", to the value of the domain?
Google wildly fluctuates the number of results depending on time of day - how this happens?

Also, Bing seems to show totally different number of results for same search, is one of them wrong?

Hi

imo, Goog search volume do not equate to value of a domain, that's registered because of those results.

the obvious meaning and/or application of the terms combined, is where value can be found.

bing in comparison to goog, just may not include as many links for some terms and vice versa, depending on those terms/phrases, etc. entered.

that would be most logical reason for discrepancy

Google in particular uses your past search history to manipulate results (without logging in, through cookies and perhaps IP address). They also show different results (slightly) depending on what web browser and OS you use.
