.CO.UK Whois Email?

Is there any way of finding out the email address of a .co.uk domain owner? I tried looking names up through whois, however, no email address was shown.

This is spot on. If you're a private individual you can opt out of having your WHOIS details displayed with Nominet.

You could try searching the site (if there is one up) for a contact address. Failing that you could always attempt to send an e-mail to admin @ name.co.uk and see if that gets delivered. Can't hurt in any case.

Opt-out (from the WHOIS) refers to the postal address only

Nope. Only through phone.

Incorrect - Phone numbers are not displayed on .CO.UK WHOIS records.

Likewise as per the above, if the registrant has not opted out the only hidden information is the postal address, or in rare cases any other information placed in those fields.

You have a Choice to opt out of ANY Private information being displayed - other than Registrant Name (which can be the name of a company, or the name of your website).

.UK WHOIS is a not a contact directory for anyone other than Nominet

It's the way it should always be with all extensions IMHO.
