I am looking to start venturing into the world of country specific extentions, but have little experience with any other than .co.uk (I live in UK). I have a few .sc and have aquired a few.us in a bulk buy that I will probably let drop as I shouldn't own them. What I was wondering is if people had any thoughts on what the best country extentions are to trade in as a UK citizen, as I know some are problematic due to restrictions imposed by the appointed registrar...
Can anyone list the 'safe' country domains to trade in that won't get me in trouble?

As far as I know, any domains available at Moniker is fair game. You can find lots of other cctld's there that do not have residency restrictions.

you can have a .jp reg with jp-domains but the cost means that you must be very selective in what you register, as with a number of other true ccTLDs.

Some of the most popular ccTLDs are those which are used as proxy generic TLDs such as .cc .tv but they too are more costly than regging .com etc. The cheapest in this field is .ws but are not too popular with npers unless a gold-plated premier name of the sort beginning with p and ending with r.

Or you can skip that & just go straight into IDN Domains.

I own a few ASCII jps for site's I'm developing. I think eventually the price will go down but most sites in English are really sticking it to you guys...

The jp-domains IDN names can be had 2for1, so that works out at $30-$35 per name. Which reg co are you using and what is the cost?

Yes I can vouch for that. I've used their service many times to register IDN domains. They are a great register. If you looking to get into the international market at this time I also would suggest going for IDN domains. IE7 the new browser that is coming out is going to support them. Sales have already hit $60,000 for them. I wouldnn't rely on a ASCII in foreign countries, they will soon be obsolete.
