I have opened a street name PO box so I can use that address on my whois contact information.
And I have a separate email address engaged with spamassassin.

How about phone number... do I have to put my real home phone number there?
I don't feel good about any given people knowing my home phone number.

You will need to provide true information tbh. Who are you buying the domain from? Godaddy do private domain registration via Domains by Proxy, so when someone performs a WHOIS on the given address you get

"Registrant:
Domains by Proxy, Inc.

Registered through: GoDaddy.com
Domain Name: YOURDOMAIN.COM

Domain servers in listed order:
NS1.YOUR_NAMESERVER.COM
NS2.YOUR_NAMESERVER.COM"

If your a business then you will need to have the legit WHOIS info there.

You could always register a personal 1-800-number (Or any other of the free prefixes), or use a cell phone or other method if you are that worried about it.

In 3+ years buying and selling I've had 1 person call me unannounced and this was a person I was discussing a deal with. As important as you think are the reality is there's phonebooks with billions of names, numbers, and addresses in them. If you're in this business to sell names the best way not to do so is using whois contact info which makes it impossible to figure out who you are and how to contact you and not putting up a "for sale" sign on the domain.
