How to analyze traffic?

There is no way to know for sure, except to buy the domain from somebody reputable and use at least a few months stats.
To verify the traffic, you can try Alexa.com and Quantcast.com, although they can certainly be wrong. To check for fraudulent traffic, try a Google search with the extension.

if the seller is really serious and the selling point is the traffic of the domain he/she's selling then at least have him show you a real public stats or let him install one like statcounter.com i know it's hassle for him/her but if the price is a bit high then he/she should give you that requirements, and also use some tool like http://statbrain.com/ to approximate the daily traffic to it.

There is one piece of advice that I'd offer above all else in this regard. Look at the name and make sure it makes sense why it would get traffic.
If someone offers you 1j47.com and tells you it gets 1000uv a month think about why? You'll probably be able to filter out most of the junk if you take the time to realize that there probably arent 1000 real people who type in 1j47.com every month looking to buy something. If that name did get 1000 uv a month I bet 999 of them would be robots and webcrawlers. The other one would be some domainer who's convinced himself 4 character .coms are great and he's looking to see if they're taken.
Heres the basic idea on how to do a traffic test yourself. Have the nameservers set to your hosting account. An honest potential seller will be willing to do this for a day or two so you can test. Probably only if the name is of a high value though. Not many people are going to bother with a traffic test for a $100 name. Add the domain name to your hosting account, and put a traffic logging script up to capture the referrer data. There are thousands of scripts available just google until you find one you like and follow the instructions to set it up. Look at the referrer data to see how people got to the page. The only problem is there are ways to foreward traffic that you may not be able to detect easily. Thats where the does it make sense rule comes in.
Below is an example of yesterdays logs from one of the sites in my signature. As you look at it you can see it gives what page the person who "hit" was looking for. Their IP address, what kind of browser they're using, and where they came from. As you can see there are 32 pages loaded. (one per line) To most people that would mean there were 32 uniques. In reality if you look at each line you will see there are a number of obvious robot visits. Looking at the referrer data there are actually only about 5 real people who visited the site yesterday, and all of them came from either google or msn's search engine. Everything else was a spider, webcrawler, or something else that has zero potential to earn any money.

Try something like "php stat counter" or "log website traffic." You'll want to do a bit of reading before choosing a script. There are tons of them out there. You really want to find the one that presents the information in a manner most useful to you.
My own script is something I coded together out of bits and pieces of other scripts I found on the web. My hosting account is with godaddy and I tailored it to work with thier linux hosting, and only to log the data I find useful. If you decide to go that route I'd happily share my script, and help you get it setup. However I think you would be better off looking for something more robust.
Just pointing a name to a parking service and letting them do the stats counting I wouldn't advise. It works for the most part, but it leaves too much opportunity for you to get cheated. The more you put in to it the more you will get out, but then again, the more you put into it the more it feels like work...
