I doubt if this will catch on.
.scot, yes, for sure a nice extention. But .co.scot?

And besides, the registration price is just below £5 per year. For that price you can get a proper .co.uk or .uk domain at some registrars.

Note that some people or local businesses that feel very proud of their Scottish identity will prefer .scot over .uk or .co.uk. So maybe there is potential in .co.scot but I am sceptic for now.
Keep in mind that in the past .sc also tried to advertise itself as "SCotland" and that never really became a success. .scot is the first true Scottish domain that became a success.
