When a domain drops does the domain age reset to 0 years or does it keep the age of initial registration?

If the domain was deleted the creation date is reset.

Prerelease domains retain their original creation date, because they do not expire and do not delete. They are simply moved from one registrant to another.

You can find out by looking at the whois record. Registrar whois can be confusing, look at the registry record, if the name is in redemption or pending delete, it's going to drop (be deleted).

yes it will reset the registration date in whois to the date of the "catch"

There might be some other indirect benefits of old domain that will remain (such as backlinks or PR - if any)
