I have read that using domain evaluation sites like Valuate and Estibot are inflated, and dont give a true value on what a domain is worth. How does everyone determine how much to list a name for?

What the market will bear. It's true about estibot. I've sold domains at 10 times less and ten times more than their valuations. The key of course is finding a buyer actually interested in buying your domain and prepared to spend more than regfee for it. BTW, Estibot and Valuate give the same values because they both use the same Estibot engine.
