Need a good registrar to register a bunch of domains at. Godaddy is my go to, but the WhoIs protection is not free.

Epik is the way to go since they apply (free) privacy to most extensions.

Note though that since GDPR most zones have the owner's details hidden anyway (except organisation and country)

That shouldn't be up to the registrar; it's a registry thing which needs to be followed according to the regulation. Maybe you accidentally clicked on 'disclose my details' or something similar?

I had a case where on a couple of registrars my details still showed. All I did was to let them know of the fact and immediately they took action to hide them.
