Let's say you are dating a girl that a (apparently mentally unstable) owner of a restaurant is obsessed with. She was a wairess there for a short time until she quit because the owner was "creepy". You did not know about this before and went to the restaurant with some friends to eat and the owner told you to leave after somone told him whom you are dating or maybe he had seen the two of you out somewhere. So you got half a free meal, but the owner also caused a big scene (on the premises of his own place).
Let's say the restaurant is called "Great Times Eatery" (not the actual name) and the owner has his developed site at greattimeseatery.com, but greattimes.com happens to be unregged and the business is known locally as "Great Times".
What kind of fun can you have with greattimes.com without getting into legal problems? Pretty much anything you want as long as you don't make any direct reference to the restaurant? Can your text and metatags make referece to the town and state where great times is located if you do it "covertly" such as "programmed in Town, State"?
(Yes, I do understand that registering greattimes.com and posting gay bondage pictures is very much the definition of a bad faith registration, but hey, in this particular case the guy is practically begging for it...) :P

I think you need a better hobby. Taunting mentally unstable "creepy" people is not nice, it's pointless, and it can be dangerous. Surely, as a successful domainer, your time is more valuable?

I don't know the guy and I don't know the validity of your story, or your girlfriends or any of the other points of view but if someone is seriously liable to go off his rocker do you really want to make yourself such an easy target?

A man has every right to decide who to let into his place of business, you do not know any of the full story...maybe your girlfriend decided to try to blackmail him by making up lies and maybe he thought you had been going there to make a point?

If you do this I can almost see how it will end.

A smear campaign is still a smear campaign even if you are hiding who you are and you would lose any such battle. Owners of successful restaurants are very well known to city leaders, police and judges since they are in the business of networking so unless you are the city gun-toting mayor on the judicial review committee you are screwed.
