how long has the site been up? The ads usually get more targeted after a few days after they index it. Only tip would be is to make sure your site contains text articles that relate to health topics and the ads should adjust over time.

Chances are, you use phrases like "shed a few pounds" a lot in your articles. Make sure you're actively targeting other health specific keywords in your text. Unless SpareDomains is right, and this is an issue of time instead of content, what the Google robot is trying to tell you is that upon skimming your article, it finds the most prevalent information to be about sheds. Make sure your titles are health related, as well as any bold or header font.

hard to guess without seeing the articles but I agree probably the articles aren't targeted enough to throw the right ads as google is pretty quick to get relevant ads up if the content is targeted, nice pickup on the "shed a few pounds" as that is a possibility.

Something else you can try is using the "Competitive Ad Filter" under "adsense setup" to eliminate companies that are advertising for your keywords

I think you should use google adword keyword tool. Which will help you to get a good keyword and you will get what exactly you are looking for.
