Who the heck creates a website just to brag about what domains they own?

Plus, I think it's too early in the .mobi game for anyone to have such a website, or am I wrong (cite examples if I am, because I'd love to see them)?

quite a few people do, and its not bragging about the names you own ...

its listing the names you own (with hopefully at least a couple that are developped)

i think websites.mobi is not a bad site ...

Who the heck creates a website just to brag about what domains they own?

It's an easy and efficient way to let people know what you have available, and what you'll be developing in the future. I've also found that it's a great way to attract co-developers, as well as individuals wanting to sell domains that seem to match one's collection.
