Has anyone had potential buyers contact you through email or phone after making your contact info public on WhoIs? Or did you get nothing but spam?

You'll get both.

Know however, professionals are aware that a private domain's email redirects to the owner's email so they will contact through that when needed.
You still need to make sure that the redirect works (some registrars forget that simple feature).

Whois could bring in buyer. If it is private, then the registrar will be the broker or marketplace and won't disclose the customer, so it is all a gamble so if hide it then need more exposure for contact information and then there is the spam problem.

Thanks. I may set up a separate phone number through an app or something, and use an email address that I check pretty often.
