Yes they do. Very common for the top wealthy to have multiple LLC’s, trusts, etc to spread out liabilities and across different jurisdictions.

Very true - there are legitimate reasons one might do that. (though not generally for a single “simple” personal transaction,.)

But you don’t generally do that
AND fund it from your lawyers home equity account
AND repay it with a dodgy repayment plan
AND generate a good years worth of fraudulent invoices in the process

I think we’re way beyond “simple.”
