I have my eye on a domain at Snapnames which is listed as "Available Soon" with a $69 minimum bid.

What if no one else bids before the "order by" date. Is it mine or does it then go into an auction with multiple bidders.

Also if Snapnames lists a domain as "Available Soon" does that mean they already have picked-up the name?

If you are the sole bidder, the name is awarded to you.

Also if Snapnames lists a domain as "Available Soon" does that mean they already have picked-up the name?
No, it means that the domain is expected to become available to them at that date.
It could either be a prerelease domain from one of their partner registrar, or a dropping domain.

If you want it I suggest placing a backorder with snap. If it's a must have you should order with multiple registrars!

The name was registered at Enom. Do those go to Snap or NameJet?

Enom domains go to Namejet, but only as prerelease. Which means there must be a backorder before they are allowed into redemption.
So if the name is truly pending-delete then all dropcatchers can compete.
