I'm not real educated on this subject, so I have a question that may have an obvious answer.
Is it safe to assume that the more searches for a specific term the more valuable that domain name is? for instance:
habbo hotel got 126502 searches, so habbohotel. com would have more value then say hotel search(29738 searches ) or hotelsearch. com? Am I wrong to assume this, or is that usually the case?

A higher OVT score doesn't necessarily mean the domain will be worth more. It just means more people are searching for that particular term. A high OVT score implies there is a demand in the market place for the specific keywords. A high OVT score also implies you may receive more traffic to your domain through type-ins.

Overture is a very useful tool, but can be very confusing and misleading.

First of all Overture takes search results from Yahoo, MSN, Ask Jeeves and others but not Google.

The first thing you need to understand is that people use a search bar for different things.

Some are typing in keywords to look for websites containing content with the keywords. For example, if I type in 'translate fish to Spanish' I am looking for a dictionary or translation tool - not a website called TranslateFishToSpanish.com

Other people do type in keywords looking for a website of the keywords. For Example somebody typing in 'My space' is probably looking for a link to Myspace.com

Results for keywords are more relevant from a development prespective than a guarantee of natural type in traffic.

For example I own ChineseRestaurantNewYork.com The overture results for the keywords , 'Chinese Restaurant New York' are 10,553 searches.

However I only receive type in traffic of about 50 views a month.

The real Acid Test is to type in the keywords without spaces plus the .com extension in the overture keyword tool. In this case ChineseRestaurantNewYork.com produces no results.

This does not mean the 10,553 searches for 'Chinese Restaurant New York' are irrelevant, if the domain was developed with SEO it would receive good search page position.

Also bear in mind that Overture does not distinguish between singular/plural or Hyphen/no hyphen and can obscure results by omitting words such as I, A The etc.

It aslo does not specify which way round the words were most searched, it could be 'Chinese Restaurant New York' or 'New York Chinese Restaurant' even 'New York Chinese Restaurants'.

Remember there are overture tools in different languages that give different results from the standard overture tool

As I have said, overture can be a very useful tool, but take care to understand it before rushing out to register domains just because they have a high keyword score.

Also bear in mind that the search results are not an exact figure, I think they take samples from the major search engine and put them through some number crunching algorithms.
