As of late I'm noticing that some dropped .orgs and .nets have premium registration prices. When did this go into effect and is this even allowed for such old and generic TLD's? First it was .biz, now the bread and butter? Will .com follow suit? And how do you know if a domain has a premium renewal price before purchasing it?

Where did you see this?

If you’re just referring to names being marked as “premium” at certain registrars, like olive.com showing up at Name.com for $900k, that’s obviously not a registry premium.

Are you sure the names you checked are not registered?

For example, TheClassics.net which dropped yesterday has a premium reg price of $999. Most generic .Biz drops are premium priced as well.

So how does this work when as soon as they drop they're listed as premium with every registrar? Did somene drop catch the domain with GoDaddy and immediately list it as a premium? Or do they just renew the domains and if it was already listed as premium it goes back up?

Every domain distributed via AfternicDLS/SedoMLS will be displayed with "Premium" label at some registrars, regardless of TLD.

Doubt it or everyone will stick to .com so most likely a reseller listed them on a premium network, it does make it look like that's the registry price.

Basically, the registrar hijacks the natural domain name life cycle where the domain name expires and goes through a number of grace periods where it can be renewed and is then deleted. Instead of going through the deletion process, the domain name is transferred to the registrar's auction site or auction partner. The domain name doesn't necessarily drop and the age of the domain name is not set to zero as it would be when a domain name really drops.
