Can customers who already have their own established website still be interested in buying a domain I’m offering them? Or is it unlikely because they already have a site? Basically, do people in this category ever buy domain names or not ?

Perhaps if you're good at sales and the domain is clearly an upgrade to their own while not infringing on trademarks/copyrights, almost not worth the effort unless it's a great name because you usually have to get the owner and webmaster aboard. I think it's more likely to be an inbound sale doing brand protection (buying alike/typo domains) or growing companies losing their geo specific name or like dropping the 'the' in thefacebook
