If you're using Afternic to list you can just list the name and not have to change nameservers. You can also forward the name to the actual listing page: Example https://afternic.com/domain/yourdomain.ext

Does this apply to DNS/Uni and Sedo as well or do they need to have their respective nameservers set for the domain?

Sedo demands for change of your DNS if you are parking with them. You are demanded to submit a code on your registrar account if you are listing your domain with them for ownership verification.
All of them demands for change of DNS, yes! you can list your domain everywhere but you can only change DNS on only one of them. Change of DNS is just for parking.

Parking = Change DNS
Selling= Not necessarily change DNS

You can list on Sedo without parking. They will either verify the ownership via Whois or make you prove it in some way.
