I would only use estibot as a fun tool. I was using the adwords tool.

hotels in france seems to have about 4400 monthly exact searches.
hotels in paris seems to have 2200 monthly exact searches
hotels in nh is less than 500, but again remember that the tool is being buggy. as it is telling me 480 exact & broad, but only 16 for the phrase.
paris & france are vacation / tourism spots, & I am sure that there are a lot of hotels competing for this business & this makes the domains you mentioned worth a lot.
I think most people would want to go to france vs NH. I really do not know what NH has to offer etc.
I just have a personal preference / rule of thumb when it comes to abbreviations & acronyms. HotelsinXX.com I would only consider taking if it really did have a high search volume. inxx just gets a bit confusing & I do not like domains that confuse site visitors. What I am trying to say is Abbreviation keyword, or keyword abbreviation normally work well together but when you throw that other short word in the mix , it just becomes too much most of the time. *again you can throw this rule out in some situations.
HotelsinLOCATION would be much better in most situations, than HotelsinABBREVIATION. People are lazy & the less thinking they need to do the better imho.
It all boils down to appearance, psychology, professionality etc

& was presented with these 2 sites

www.HotelsinTexas.com
I think I would pick the latter one.
