Say I own a .com addy or TLD. Should I bother with buying out all the .net .org .tv etc domains, if I plan on selling it anyways? say it was something generic like potatoes.com do I really need potatoes.net .org .biz ? Is that going to make me more $$$ ?

If its something like potatoes then yes. But a name that good wont be available in all TLD's. I say that if its a personal site, just buy the .com. If you really want to reg them all, but its not necessary IMO.
Personally, when I've got a good .com that I plan to sell, I'll get the .net and the .info (as it's only $2). I'd only consider other extensions if the showed some relevance to the name, e.g. if the domain was napoli.com, I'd also get napoli.it
If the .com is good taking the other TLDs is a good choice because :
1. The value of .com increase when there is no similar TLD to register
2. You avoid questions like this from buyers "why i shall give you $$$ and not go and register a .net"
