I'm about to undertake a sale of a domain via Escrow.com, and upon asking the buyer for his personal info to use in the transfer of the domain to him through GoDaddy, he replied, "Leave the domain details as is, I'll change them when I get it."

Is this a standard way of transferring a domain? I've sold a couple of other domains previously and have entered the buyer's new info myself. Is there anything I should be wary of here? I don't necessarily see anything wrong with it other than that he gets to know who I am but not vice versa, but is there anything I'm overlooking?

Some people refer to just enter it themselves... and hey, it saves you time. ;)

Sometimes I have people enter details for me, sometimes I ask if they just transfer it - doesn't really matter.

It's best to insist you would enter his details beforehand before changing ownership, this way if the buyer would abuse the domain for some reason in any way your details are not connected to the domain.

He could always update it himself afterwards.
Just mention it's a standard precaution procedure from your side to change the WHOIS of a domain before you transfer or push a domain to a new owner.

Thanks! That's the kind of thing I was thinking I might be overlooking...I can see the potential for abuse.

BE CAREFUL!!! I believe the only thing that escrow.com checks is whois to know if the name has changed ownership. Someone feel free to jump in and tell me if I am wrong on this. The buyer could be trying to pull a scam. Even if you do change the info, they could always change it back when they get it. It doesn't take long, and I'm not sure if escrow.com has access to any kind of real time whois history. You might consider using moniker.com escrow, as I have heard that it is much safer.
