Because G7 isn't a chord which "belongs" to the KEY of G major. It's the dominant 7 (dominant refers to the 5th note of the scale) in the key of C major.

A dominant 7 is made from the 5th, 7th, 2nd and 4th notes of the diatonic scale (which, in the key of G, is g-a-b-c-d-e-f# ...)

Dominant 7 chord in the key of G is D7 (d f# a c)

BTW, a G7 chord with an F# instead of an F is called a G Major 7 - you won't see maj7 chords as much in popular music - sometimes ballads, more in jazz, show tunes ...
