"Math" should actually be a plural verb

Actually you mean plural noun. In English the term doesn't exist in the singular - ie, "a mathematic", however the plural form "some mathematic" remains without an 's' in US English and with one in British English.

Therefore, there is no overt marker for the plural in the US.

In Australia we use both the words "Math" and "Maths"... I don't think it matters which word is used.

You've been watching too many American sitcoms to think "math" is used in Australia. The correct word in Australia and England is "maths", "math" is the American spelling.
