If the company (innohosting) provides Legal Documents in their VPS accounts, how important are these things?
Do you use it?

Highly important. Why? If your upstream provider has a TOS/AUP, you darn well better abide by it. It would make sense that by extension, your own TOS/AUP would follow suit for the most part with any added stipulations that you would desire.

These legal documents can protect you from alot of things (eg fines, DCMA etc)

Although now adays you see many hosts just start racking these TOS/AUP off other host sites.

They are important. I suppose they protect both sides as web hosting provider as you as the end user.

Acceptable Use Policy and Privacy Policy are highly important, always study then before subscribing for an account, as you should know what content you are allowed to host, then CPU limits if your host sets any ary important, as this is what may cause you to upgrade to the next level if you have unmetered disk space and unmetered bandwidth.

I assume such documents protect web hosting service provider first of all.

Sometimes SLA is not ideal... Not from the each web hosting provider but from the ones which copy paste that from other places.

They are important in terms of knowing your rights and obligations, say moneyback guarantees, CPU and/or bandwidth limitations, terminating your contract with a hosting provider.
Never sign for a hosting account without a preliminary study of their AUP.

Not many companies offer Legal documents, I haven't seen this option at hostgator or dreamhost, innohosting has advantage of that. It seems they take a good care of their clients.
