They give you the history of sales for many short domains as well as the channel (market place) where the sale too place.
I think that the majority of 'low to medium price' 4L and 5L transactions are published on these 2 sites (high price or very low price transactions are probably not reported).
Finding end users directly for domains such as eday.org may not be easy because a variety of businesses may be interested. So, unless you have an exceptional domain where you can easily visualize end users, market places are a good option to sell a domain.

yes: all really valuable domains are registered
no: some domains, in particular geo domains or domains that would interest only small businesses are not yet registered or have been dropped and not renewed. For example, there are plenty of 5L com domains available currently. Most likely, they have been purchased 2/3 years ago during the hot 4L speculation and the owners were unable to sell them. Some are very pronounceable and are quite decent brandable domains. Most are not.
