How to "Create Name Servers"?

Apparently some registrars (eg Hostway) allow us to "create your own name servers" or "create your own DNS servers". However, I cannot find that function/capability on GoDaddy and Enom. Does anybody know how to do this? Because instead of using a long nameserver like ns1.ldfhwleidhlqdgl.com I would prefer to use ns1.XX.com, etc. Enom has something like "default host records" but I have zero idea what it is!

Log In > Domain Names > Register DNS

I think namecheap can give free private nameservers
Not positive.

It's as reliable as the server you use to run your nameservers on. I've never had any issues setting it up with Cpanel or Ensim servers.
