I really like go4.it but I dont really know much about the value of .it so I cant comment. That is the most valuable one you have IMO.

go4.it - ok domain hack but would need development to be worth more than reg fee, plus only Italians can buy this extention
youspeak.it - reg fee or less

If you develop it then its value would be determined by how much traffic it receives and how much revenue it makes. Plus it would lose value since only Italian citizens would be able to buy it from you.
