Don't agree with @Daniel Owens. Perhaps the name in question is not so common, but in uk they prefer .co.uk more than .uk.
If you are targeting UK buyers, then .co.uk or .uk is okay I feel. Of Course if your target is much broader than limited to UK, then it makes no sense going for them.

It's a well established fact that two-tier extensions are not as popular as the single tier extensions. Similar to how .com.co is not popular or .com.mx

You are right in general Daniel, but in case of United Kingdom, the people are so used to .co.uk for so many years that it will take time for .uk to catch up.
