I would like to know my rights and how far the copyright law expends on the materials posted on a site.
Which sites can I copy and paste from?
And how can I protect my own original material, pictures, videos?

Only those who give you written permission to do so.

As soon as you create a written work, you own the copyright (US). Anyone who uses that material without permission is in violation of the law.

There are many limitations on Fair Use. To clarify, I'm just talking about taking a written work in it's entirety from another website (or publication) and using it for your own purposes.

You can watermark your pictures to protect them against theft.

As a rule, "copying and pasting" from another site is not a good practice. Even where the material is "public use" or "open source," that's an easy thing to just not do.
