NotePad++ is a open source syntax highlighting code editor (A pumped up version of Notepad built for coding and has a lot more features)

I use this for everything as well. It's also got easy to install plug-ins, and a hex editor. They also have a portable version of this it's a really lightweight but good program. It's also got auto complete (but you have to press CTRL+SPACE)

Yep it is a very good program. About a Mac Edition, there isn't one available try searching google though and since this is Open Source you may be able to find a Mac ported edition.

I prefer NotePad 2, but this still is very good software.
