You can use it for anything, also for selling cakes* - there are no limits.
It depends just on the development / marketing.

*But of course I recommend it for something which is related to airlines today.

Airlines is usually used after a keyword like Emirates, Turkish, American, etc.
And frankly, what is the pool of potential buyers ? There are not hundreds of new airlines created every day.
In that TLD it doesn't make sense, even in .com I would not buy airline domains because there is a hardly a market.

Maybe, but nobody needs a name like that, and there is no market for .today domains anyway.
At least if you had a name like travel.today or holiday.today (rhymes) or fly.today it would be slightly more appealing (and make a lot more sense). But I think these names are best suited for redirects than standalone websites.
