If I owned a coffee brand named xyz coffee then I'd go with xyz.coffee like ZapNano said. If I owned a coffee company with another name, or coffee products etc. then I'd pick coffee.xyz.

Kind of like ecoffee.com purchased coffee.coffee for $14.5K recently as a redirect. They wanted coffee as a keyword but got the extension too. Good purchase on their behalf IMO..
