Transferring domains and DNS

This is probably a bit of a noob question, but here goes...

When transferring a domain to another registrar, what happens with your DNS settings? For example, I have several domains at GoDaddy and I use GoDaddy's DNS servers to point my sites at a web hosting package with another provider, if I transfer these domains to Moniker what will happen to the DNS settings?

most registrars keep nameserver or dns settings during the transfer, I'm sure there a few that do not, but I haven't run into any that don't but I mainly use enom, godaddy, namecheap.

once the domain is transfered the account it was transfered to will control the DNS settings and has to set it up..The changes may take a day or so to show up live on the internet.
