Rather spend your time locating the ones with an established presence above the small/family business level. For example, a chain of Mexican restaurants or other businesses with a volume making it realistic to pay what you are looking for. Afterwards, you can contact other potential end users, but the chance that a better domain is worth €15.000+ for a small business is slim.

I've not Googled the term, but what I'd do if i was you is see what boxers/wrestlers/MMA fighters go by the nickname 'The Mexican' and contact them about it and see if they are interested in the domain.
