Description

Sushi meshi is sushi rice. Short grained rice with a vinegar and mirin mixture added to it while hot and mixed lightly until cool.
Ingredients

¼ cup rice wine vinegar
¼ cup mirin
1 tsp salt
5 cups cooked rice

Directions

Mix the vinegar, mirin and salt so that the salt dissolves completely.
Pour over the rice and mix gently to avoid breaking up the rice, preferably with a wooden paddle.
