I'm not entirely sure what you are asking, the meta description tag is meant to briefly describe your site, not just have loads of keywords in it... thats what the keywords section is for.

So, what is your site about? I assume it would be something like "A service for booking holiday accomodation in Scotland - including self-catering cottages, bed and breakfasts, campsites, hostels and hotels" Or something to that effect...

Yes I thought you had to match up the key words with your description so the search engines highlight them in your description when someone searches for that keyword

These keywords are not very usefull. For even moderately competetive terms, you should not optimise for more than one phrase per page. thus the other just dilute the optimisation effects.
For example, if I optimise page for the word webdesign, I minimise the occurences of all other possible equivalents of the word webdesign within the same page. Similarly you should stay with Scotland Hostels, make the title, H1 and description using these terms and never mention camps or hotels at the same page. Than mak other page for Scotland camps etc.

the description isn't suppose to be too long, some engines don't list sites with excessive keywords and too long titles or descriptions

the descriptions are what surfers are suppose to see in search engine result pages

just describe the main focus of the site

my 2 cents and I do own a SEO site
