I've got two domain names ending in .hk, both are short (4 - 6 characters), one is a generic English term and another is a sport. Both are bundled with a free .香港 Chinese domain name as per Hong Kong policy.

How do people valuate .hk domain names, which indicate Hong Kong identity? Can I sell them at good price compared to other ccTLDs?

Only a very few decent sales of .hk over the years and nothing of significance recently. Casino.hk sold a couple of times around 30K some years ago, surprised me as casinos are illegal in HK.
HK is now officially part of China so .cn likely to take precedent in the coming years.
I have had a couple of very premium keywords in .hk for a few years but no interest.

namebio listed a recent sale of platinum.hk at US$3499, which now redirects to a pet food supplier, i.e. the domain has been sold to an end user. However, the other .hk listed at namebio are mostly still parked.

I also have some .hk domains like that, a single English word ending in .hk . How can I make money from that?

but HK is dying due to political pressure from China. Investments are leaving and choose Singapore as the Asia financial centre instead. In China people are arrested for no reasons (especially minority ethnicity), and we are afraid one day this will come to Hong Kong
