Answer to first question.
It depends upon you. What is the structure of your site? Accordingly link/pages are included.

Answer to second
Update are to be done manually. so no possibilities to create site map which will be automatically updated every day

My site have already about 1500 pages and it's growing about 15-30 pages every day. So if I understand your answer corectly I can include all this pages in my sitemap ?

yaah sure why not!

You sitemap may contain up to 10,000 links from what i know and the size should not be bigger than 10 MB.

I had a sitemap of more then 300,000 URL's

I submitted it to google. And it started giving errors on 50,000

For Sitemaps that are larger then 50,000 URL's you have to split them in parts.

I believe you can have a separate sitemap for every directory on your website. So if your pages are spread out in directories, it would be alright to have 10 sitemaps.

Just make sure you let google know about all of the sitemaps by logging into your Google Webmaster Tools Account... note the more appropriate name change.
