Can I go to a font site (1001freefonts.com), go through all the fonts, download them all (come in zip format) and then group them together into one big .zip file and redistribute on my site?

I would keep all of the files that are inside the .zips intact.

I am not sure that the website owner will allow the fonts on his website to be re-distributed on another website.
You should probably ask first.

As far as I know GPL allows for profit if you value-add to the product. A bundle is considered a value-add. People sell GPL software all over the place.

I think you can, im not 100% sure, its best to contact the creator and ask permission or check terms and conditions

When you say bundling, do you mean adding them to other services, or just taking what you paid for then distrubuting for free?

im not paying for anything.. i'm manually downloading each font and packaging them into a giant zip file sorted by letter.

As stated it depends on the licence that the fonts are distributed under, you may find that the site you are looking at does not necesarily have the right to distribute them.

Regarding the comment about selling gpl stuff. If i remember correctly you can charge for distribution but not the product itself (unless you are actually selling an addon/mod that you created yourself)

Alot of packages get sold eroniously on sites such as ebay (and sometimes you see them on here).
