The next logical step from Fruity Loops would be to Ableton Live. The interface is easy to use and it is geared toward performers as opposed to engineers. It will also play all of your soft synths with no problems, unlike Reason.

The major advantage you would be gaining is the ability to record multi-track real-time audio.

As far as editing Sound Forge is the best, and I would put that up against your Audacity any day of the week. But, it wouldn't be a fair fight since audacity is free. :)

The only thing unbeatable about Audacity is the price.

Having done this sort of stuff for a while now (about 4 years), I can tell you that every program has it's own pros and cons. I suggest trying out as many as possible (most have free demos available), and then deciding what you like the most.
A few that havn't been mentioned yet for you to check out:
ProTools (propriety hardware is a major drawback)
Cubase
Adobe Audition (formerly Cool Edit Pro)

I can't stress enough finding the program that you like best. The most important thing is to be comfortable with the program you use. ;)
