Pros: "domaine" is taken is many different TLDs. This could indicate that this keyword has some interest. How many of the domains that are developed is another question.
Cons: The .one TLD is not particularly popular, and I find no particular connection between a vineyard and "one." On top, non-English keywords are more difficult to sell. High-end sales of non-English keywords are typical in .com and relevant ccTLD's. There are only a few reported sales of .one domains, so making general appraisals is difficult.
My guess is that this domain will receive little interest from resellers. If you find an end-user, you should probably accept fast. It looks like the renewal fee is in the $10 area so you can hold and see how the .one market develops.
