Have read GoDaddy's description, and still couldn't be sure:

if I don't add the reserve price -
when a 7-day public auction ends, does the domain go to the highest bidder automatically ? -
or I still have to accept before the deed is done?

I mean, if I, let's say, miss an auction's ending -
will I just learn afterwards that domain is sold and gone?
Or I still will have the option to change my mind and to keep the domain by not giving my approval ?

Thank you!

Yes, if you do not have a reserve price, the domain goes to the highest bidder automatically. However, you may want to check to see if you can change the reserve price while the auction is ongoing (if you haven't had any bids yet).
