It's no surprise to me that a DeFi institution would want to use a dot org, even if it owns the dot com, because it's quite common for them to use dot org... Essentially because many consider themselves orgs specifically and legally rather than companies. So if one owns the dot com and prefers to use the dot org why would that come as a surprise to you, especially considering how many of the most reputable DeFi brands use dot org?

Had a few offers in the 1k - 5k range and a 10k offer that I'm pretty sure was to do with this space - countered and they f**ked off......No big loss - renew and forget

The potential buyer was doxed (name and startup). He did register a few other extensions.
I did get back to him via DM, but nothing so far... so now it is a wait and see.

Nothing you can do besides talk to them and make them want more/need
Maybe it will happen, maybe it wont, maybe its not the right fit.
