I wanted to get a few domains off eBay, and as far as I'm aware, eBay doesn't ask its people to verify their domains. So how can I make sure someone is not screwing me over? How do I make sure the domain name he says is his is truly his? What do you guys usually ask of the person?

I typically wouldn't buy a domain on ebay...but there are 2 things you can do.
1. This one isn't exactly foolproof, but is easier and quicker...you can do a WHOIS lookup on the domain...which will show the owner. The only issue is the guy on ebay can simply use the owners name, even if he doesn't own it. Or he could have privacy on it.
2. To really make sure, you can ask him to add a text record to the domain...this can only be done by someone that actually has control over the domain...so if he is able to add the text record, you know he can control the domain.

It's more often buyers who screw over the sellers on that platform, not the reverse. However, you can check their prior name auctions, feedback, and seller rating to gain some insight about their selling habits and reputation.

Additionally, check whois, as some sellers will have matching whois with their seller account name.

Have any of you guys actually tried doing it with asking the seller to add some random TXT record to his domain? This looks like the most reliable way to do it, but also the hardest.

Alternatively they could redirect it temporarily (say for 24h) for you to see, this is easier than setting a TXT record.

At most registrars, adding a txt record is pretty simple. It shouldn't take more than a minute or two for them to add it. If they give you a hard time about it, I would consider that suspicious.

ask them to change DNS.
