For the screen I tend to stick with Verdana & Arial. Verdana is fine for screen, on print however I find Arial to be slightly better.
Times is not as easy to read, I would suggest no to use that font for large blocks of text if you want to retain visitor attention.
IMO 2-3 fonts are enough. Stick to the most common fonts, Mac & Linux users may not have all the fonts available on a Windows PC
It really depends on what you're using it for. It really boils down to contrast with colors, to maintain legibility.
I will say this, though, about using colors - make sure you have a printer-friendly version that will print in black on white. Most people's defaults do not print backgrounds, so if you have, say, white type on a deep red background, the printer won't print the red, and instead you'll get a wasted print job.
As far as readability of type - there are more fonts than you realize which everybody has on their computers. I personally don't like arial, and generally stick to either verdana for sans serif, and georgia for serif. But really it depends on what you're using it for.
Red or Black/white stroked in black/white are good , it kinda depends on the font u chose , everyone has theyr one taste , so I can't tell which font would everbody like
