What is the best method of selling a domain for about $500 and making sure that your transaction will be secure?

There are escrow services. If you search you'll probably find quite a few.

Is escrow worth it for a $500 deal or should I stick with PayPal?

Most take a percentage and have a minimum fee. Whether it's worth it or not is up to you. You have to ask yourself if you are willing to lose that amount in order to have a safer sale.

check the fees on both of these and make your decision on if the fees are worth it, many more services to choose from, but I have had quick service from escrow.com, you could also ask the buyer to split the fees with you to knock down your costs as well.
