Is there a way to hide the "mailed-by: [mail server]" header that my host seems to automatically add when I use my server to send e-mails?

for whatever purpose it might be you can request this to your server admin to do for you, if not pls. do understand it's for your own protection as well, so that server admins/postmasters can track who send what.
